As promised earlier, here's the recipe for the very easy peasy kacang moist chocolate chip muffins.
Btw, the word kacang used does not describe the content of the muffin ok. no there's no kacang as in peanuts in it, just almonds. kacang is just to describe how easy can the muffin prep be. so in short, tak ada kacang. just kacang badam. what am I crapping?....anyway......

try it to believe it!

I've made tons of muffins previously and non has actually turned out to be this soft and fluffy. The texture is always a bit dry and hard but this one turned out just perfect!

very moist
filled with chocolate goodness

and it feels like i'm actually indulging in some expensive muffin bought from an expensive bakery in london! have it with a milkshake at your balcony minus the gloves and trenchcoat. well, since we're also in the 'winter' season, a blanket wrapped around is still acceptable.

And no....i'm not joking.

So let us start.

Firstly, you need to go get your ingredients. Run to your nearest supermarket and head on directly to the baking section.

I did'nt run.

 I drove instead.

The nearest supermarket is TMC and it's too far from home to actually run or cycle.

Once in the supermarket, don't divert elsewhere.

Ignore the roast chicken at the entrance, close one eye if you pass by the ice cream section, do ensure that you don't divert as there will be a huge possibility that you might just end up buying the ready made muffins at the bakery section.

 that always happens to me.

So ignore everything and  here's the list you need :

1 PACKET of all purpose flour (any brand) I used some 1malaysia brand since it's the cheapest.
1 PACKET of  caster sugar (any brand) again i'd pick the cheapest
1 PACKET of chocolate chips (any brand) I used HERSHEYS or NESTLE cos it taste better than the loose ones packed by Giant or Tesco.
1 SMALL PACKET of cocoa powder buy good quality ones. it definitely gives the different taste in your muffin.
1 SMALL BOTTLE of baking soda
1 SMAL BOTTLE of vanilla extract
1 SMALL TUB of plain yogurt
1 SMALL BOX of fresh milk
1 SMALL bottle of vegetable oil
1 SMALL 1 DOZEN non stick muffin tray ( if you don'tt have one )

 Once you've got all these, pay and dash right back home.

Let's start baking.

Recipe makes 12 muffins
Purchasing time : probably 20 mins if you don't roam around.
Prep time : 15 mins
baking time : 20 mins

2 cups all purpose flour
1 cup white sugar
1 cup chocolate chips
1/2 cup almonds
1/2 cup cocoa powder
1tsp baking soda
1tsp baking powder

1tsp vanilla extract
1 egg
1 cup plain yogurt
1/2 cup milk
1/2 cup vegetable oil

1. Preheat oven to 200 degrees for 10 minutes.. Grease the non stick muffin tray bought earlier or line with paper muffin liners if you have it. 

2. Combine the DRY INGREDIENTS flour, sugar, 3/4 cup chocolate chips, almonds, cocoa powder, and baking soda in a large bowl.

 2. Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth. wire whisk will do. no need the electric mixer. leceh to cuci nanti epecially for orang malas like me.

 3. Pour into chocolate mixture and stir until batter is just blended.

4. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.

  1. Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool it for 10 minutes before removing to cool completely on a wire rack.

Easy kan?

Try it, and tell me how yours turn out. oh BTW, this is not a sweet muffin. it is very chocolatey and bitter. if you want it to be sweet, add another 1/4 cup of sugar or use sweetened cocoa powder.

Personally, I like it less sweet. best to be eaten when warm with a full scoop of vanilla ice cream.
