FEEDme Free Recipe : Tuna Chilli Padi Baked Pasta

This is one of the most simplest and delicious dish I've made on a very lazy day.

Since I was out of fresh meat in the fridge, looked into my cabinets and found a canned tuna. Decided to prepare this instead of the usual tuna sandwiches we always do.

So here's the recipe :

Recipe feeds about 4 people and can be baked in a 8x8 baking dish.
Preparation  time : 15 mins
Cooking time : 15mins

* i don't have photos of every items used, hope some of the pics here would help.

1 canned tuna ( i used water based tuna)
1/2 packet of spiral pasta. u may use any kind of pasta.
2tbps of butter
1 onion
1/4 green and red bell peppers
about 3-4 chilli padi
2 cups milk
1/2 cup all purpose flour
cheese. any kind of cheese for topping. i use parmesan.
salt and pepper to taste

method :

1. Cook the pasta for 2 mins or as instructed on it's pacakging. Be sure not to OVERCOOK it. Nothing taste better than a springy pasta instead of a soft wobbly overcooked ones. Once done, drain the pasta and run water through it to avoid it from sticking, Put it aside.

2. To make the sauce

Melt 2tbps of butter in a pan.

 2. Once butter has melted, add in 1 whole chopped onions and cook it until it softens.

 3. Once softened, add in chopped bell peppers and cook it for about a minute.

 4. Add in the chilli padi. You can skip this if you don't need it to be spicy. i'm a die hard fan of spicy food. I can't live without chili.

5. Add in the canned tuna. Don't bother removing the water. we need it for the sauce.

6. Stir it and cook it for another minute.

7. Add in 2 cups of milk. I use fresh milk as it taste creamy and yummy. a better choice than heavy cream.

8. Again, stir it for another minute.

 9. Then add in 1/2 cup all purpose flour to thicken the sauce.

10. Stir it till it thickens a little and looks like in pic below. do ensure that its not too thick as we need to coat the pasta with the sauce.

11. Once done, then its ready to mix the pasta into the sauce.

13. Don't forget to line your baking dish with butter, else the pasta might stick on it when baking. Once pasta and sauce are mixed, pour it in the baking dish. Pour all excess tuna on the top.

14. Sprinkle the top with your favorite cheese. put it as much as you like, the more the yummier.

 15. Then heat your oven to 220 degrees for 10 minutes and pop the dish in the oven for 15 to 20 mins until the cheese turns golden brown.

16. Serve it when its still hot. Such a yummy filling dish you won't wanna share it with anybody ;p

As promised earlier, here's the recipe for the very easy peasy kacang moist chocolate chip muffins.
Btw, the word kacang used does not describe the content of the muffin ok. no there's no kacang as in peanuts in it, just almonds. kacang is just to describe how easy can the muffin prep be. so in short, tak ada kacang. just kacang badam. what am I crapping?....anyway......

try it to believe it!

I've made tons of muffins previously and non has actually turned out to be this soft and fluffy. The texture is always a bit dry and hard but this one turned out just perfect!

very cakey
very moist
filled with chocolate goodness

and it feels like i'm actually indulging in some expensive muffin bought from an expensive bakery in london! have it with a milkshake at your balcony minus the gloves and trenchcoat. well, since we're also in the 'winter' season, a blanket wrapped around is still acceptable.

And no....i'm not joking.

So let us start.

Firstly, you need to go get your ingredients. Run to your nearest supermarket and head on directly to the baking section.

I did'nt run.

 I drove instead.

The nearest supermarket is TMC and it's too far from home to actually run or cycle.

Once in the supermarket, don't divert elsewhere.

Ignore the roast chicken at the entrance, close one eye if you pass by the ice cream section, do ensure that you don't divert as there will be a huge possibility that you might just end up buying the ready made muffins at the bakery section.

 that always happens to me.

So ignore everything and  here's the list you need :

1 PACKET of all purpose flour (any brand) I used some 1malaysia brand since it's the cheapest.
1 PACKET of  caster sugar (any brand) again i'd pick the cheapest
1 PACKET of chocolate chips (any brand) I used HERSHEYS or NESTLE cos it taste better than the loose ones packed by Giant or Tesco.
1 SMALL PACKET of cocoa powder buy good quality ones. it definitely gives the different taste in your muffin.
1 SMALL BOTTLE of baking soda
1 SMAL BOTTLE of vanilla extract
1 SMALL TUB of plain yogurt
1 SMALL BOX of fresh milk
1 SMALL bottle of vegetable oil
1 SMALL 1 DOZEN non stick muffin tray ( if you don'tt have one )

Once you've got all these, pay and dash right back home.

Let's start baking.

Recipe makes 12 muffins
Purchasing time : probably 20 mins if you don't roam around.
Prep time : 15 mins
baking time : 20 mins

2 cups all purpose flour
1 cup white sugar
1 cup chocolate chips
1/2 cup almonds
1/2 cup cocoa powder
1tsp baking soda
1tsp baking powder

1tsp vanilla extract
1 egg
1 cup plain yogurt
1/2 cup milk
1/2 cup vegetable oil

1. Preheat oven to 200 degrees for 10 minutes.. Grease the non stick muffin tray bought earlier or line with paper muffin liners if you have it.

2. Combine the DRY INGREDIENTS flour, sugar, 3/4 cup chocolate chips, almonds, cocoa powder, and baking soda in a large bowl.

 2. Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth. wire whisk will do. no need the electric mixer. leceh to cuci nanti epecially for orang malas like me.

 3. Pour into chocolate mixture and stir until batter is just blended.

4. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.

  1. Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool it for 10 minutes before removing to cool completely on a wire rack.

Easy kan?

Try it, and tell me how yours turn out. oh BTW, this is not a sweet muffin. it is very chocolatey and bitter. if you want it to be sweet, add another 1/4 cup of sugar or use sweetened cocoa powder.

Personally, I like it less sweet. best to be eaten when warm with a full scoop of vanilla ice cream.

Drooling already ?

Us right after baking. comot and belum mandi.

Happy trying! don't forget to tell us how it turns out!

Ache Day

Being normal and not  a mutant,

I do have my down times.
Days that I feel sad and ultimately unhappy.
Major heartache.

Bear with me.....

p/s : I am not going through PMS or menopause and NO I am not dying tomorrow. (well hopefully not)

Found these three very meaningful and deep quotes.

Decided to post it up today as remembrance if I ever decide to look back into my previous post when I'm finally 70, with kids and grandkids or probably great grandkids or great great great grandkids....pffftttt..yeah righttt..

"Sometimes in life you find a special friend,
Someone who changes your life just by being part of it,
Someone who makes you happy and laugh till you can't stop,
Someone who makes you believe that there is really good in this world,
And someone who convinces you of happiness in life."

"Life doesn't always introduce us to the people we want to meet.
Sometimes life puts us in touch with people we need to meet
To help us,to be with us,to love us,to hurt us,to leave us and to gradually strengthen us to a person we were meant to become."

"There are things we don't want to happen but have to accept,
Things we don't want to know but have to learn,
and people we can't live without but have to let go....
The worst kind of pain is when you're smiling just to stop the tears from falling.... "

I don't usually have sad photos of me, so this is the closest fake sad photo I could post. But truly, deep in me hurts a million times more than the fake photo

The broken hearted girl is hitting the bed.
